H-E-B Whole Beef Brisket $4.99/lb. X 12.87 lbs = $64.22Matt is smoking this Beef Brisket on his Oklahoma Joe. This is one nice looking beef brisket. H-E-B always bringing the quality meats to its customers. H-E-B Pork St. Louis Style Spareribs $1.97/lb. X 3.46 lbs. = $6.81Matt decided to try out Kosmos Q Reserve Blend Brisket Injection. The rub selection for the beef brisket was a combo of Kosmos Q Cow Cover Dry Rub and Kosmos Q Texas Beef Dry Rub. Matt bought Kosmos Q Competition Brisket Mop just in case. Matt is smoking with B&B Post Oak Wood Chunks and B&B Competition Oak Charcoal Briquets. I am smoking on my Traeger with Traeger’s Meat Church Pellet Blend. I love the oak and hickory combo when smoking pork. Pork Spareribs are my favorite cut of meat to smoke. It is time to prep these Pork St. Louis Style Spareribs. The silver skin has been removed from the pork spareribs. I am getting better at that maneuver. My go to spice rub to use on pork is made by the guys at Slap’s BBQ. Meat Mitch Whomp BBQ Sauce is epic. If you aren’t trying this BBQ sauce, you are missing out on the best sauce on the market. I thought we would try the Meat Mitch Char Bar Table Sauce. Meat Mitch, you are loved here at this BBQ blog. Keep up the amazing work. These Pork Spareribs are prepped and smoker ready now. The beautiful sun shining down on my Traeger and today’s Pork Spareribs. Two hours in on my five hour smoking session.These Pork Spareribs are looking good. These are the longest rack of pork spareribs I remember smoking. I am using H-E-B Texas Wildflower Honey for my glaze on my Pork Spareribs. I am combining it with light brown sugar and letting the magic happen. I am using H-E-B Texas Tough Pink Butcher Paper for the first time instead of aluminum foil. Gay loves Buffalo Wild Wings Asian Zing Sauce and this spicy sauce is changing up my sauce thoughts and game. I have started using my vacuum sealer lately and packaged these pork chops in Asian Zing on 5-15-22I am excited to see how these pork chops are going to turn out after a two week marinade period. The Traeger is filling up nicely this afternoon. The Asian Zing Pork Chops are smoking and very close to being flipped. Gay’s Meat Church Holy Voodoo Pinto Beans are always so amazing. The Pork Chops are looking ready to be pulled from the grill. The Buffalo Wild Wings Asian Zing Sauce Pork Chops are now ready to be devoured. I think I will cut one of these pork chops to see if I nailed it. The Asian Zing Pork Chops are cooked perfectly. I have just unwrapped my Pork St. Louis Style Spareribs from the pink butcher paper. The honey/brown sugar glaze with Meat Mitch Whomp BBQ sauce turned out awesome. During the pandemic, I decided I was going to master the art of slow smoking pork spareribs. After many smoking sessions and a lot of trial and error, I think the time I have spent is all worth it. I have the spice rub, glaze and sauce combo in sync. And the beautiful result after five hours of smoking is slice ready pork spareribs. This is the prettiest pork rib I smoked today.
